Peter's Special Ribs Recipie
The sauce:
- 1 cup ketchup
- 1/2 cup brown sugar
- 1 tbsp garlic powder
- 3 shots of hot sauce (1/4 tsp) more if required
- 1-2 tsp Balsamic vinegar
- dash liquid smoke
The dry rub:
- 1/2 cup br sugar
- 1/2 cup kosher salt
- 1 tbs ground cumin
- 1 tbs ground black pepper corns
- 1 tbs ground red pepper corns
- 1 tbs ground green pepper corns
- 1 tbs ground chillie peppers
- 1 tbs ground fennel seeds
- 1 tbs ground coriander seed
- 1 tbs ground rosemary
- 1 tbs ground white sage
- 1 tbs ground juniper berries
- 1 tbs ground mustard seeds
- 1 tbs ground lavender
- 2 tbs celery salt
- 1 tsp liquid smoke
- 2 tblsp garlic powder
The process:
Clean the ribs and dry them off. Rub them with the spice mixture and
leave them covered in the fridge over night. Next day place them
directly on the top rack of the oven with a sheet of foil on the
bottom rack to catch drippings. Bake at 275-300max for 4 to 6 hours.
Baste with sauce only in the last hour of cooking 1/2 an hour on each
side, unless you want a gooey type rib, baste them for the last 3
hours every half hour, your call.
